Their remarkable complexity comes from an extended fermentation with three carefully selected yeast strains in open fermenters, followed by more than a year of maturation in seasoned French Cognac barrels. The unique climate and the almost mystical atmosphere of our 300-year-old barrel cellar undoubtedly leave their mark on every vintage.
